In our original cupping, we noticed a wonderful orange zest note that we wanted to carefully balance and retain. For this reason, the roast of these beans remains light, but not venturing into the ultra-light side of things to avoid any hay flavors that could come up if underdeveloped. This roast has been optimized for a filter coffee where a wide flavors can be extracted and explored.
