About the Beans

This full-bodied Yemeni bean bumps the traditional coffee flavors up to 11 while also bringing in some complexity from its natural processing. Heavy on the cooked sugars, dry chocolates, and sweet nuts, this coffee is sure to please any coffee drinker and hold its own in milk drinks. These beans are great for espresso from both a flavor profile and an ease of extraction.

Curation

These beans stood out to be because of their complexity and versatility. I wanted the first release of the My Type series to be something that could hold its own in a filter brew while also making a great cup of espresso.

Beyond application, the flavor profile stood out to me in the cup as something truly extraordinary that danced across my tongue with a presence and power that just isn't available to those who don't drink specialty coffee. Yemeni beans are somewhat rare, and getting a lot of peaberries is a experience not many get to have.

Roasting

In an effort to balance the mixed applications of this bean, the roast level was brought up to a medium in our books to allow for some of the more traditional flavors expected in espresso to shine through while still allowing for a complex and invigorating filter coffee. With espresso in mind, the length of the roast was increased to hopefully help with extraction since that is an area where modern specialty coffee can struggle.

After a few test batches, the roast level was pulled back ever so slightly to try and retain a beautiful raisin flavor that was lost at even a slightly higher temperature. Airflow for this roast was kept relatively low as to not wash away the flavors we worked so hard to develop and keep the body of the coffee as full as we could.
